6 of Our Favorite Grilling Recipes for Summer

June 17, 2019

Summer is so close you can almost taste it…or even smell it! If the scent of grilled steak and vegetables has started wafting through your neighborhood, you know that summer is almost here, which means it’s time to brush the dust off of your grill and get to cooking. But what can you cook?

The better question is probably, “What can’t you cook?” on the grill, because the answer is “not much.” When it comes to summer grilling recipes, the options are nearly endless. At Gochnauer's Home Appliance Center in East Petersburg, Pa., we understand how important home-grilled meals can be for you and your family. Bonding outdoors over tasty food while enjoying beautiful weather goes a long way in bringing your friends and family together over the summer. So instead of taking the time to mull over what you want to cook, Gochnauer’s has put together a list of a few of our favorite grilling recipes for any occasion.

What can I grill for a crowd?

If you have a smaller home, you know that summer is the perfect time to entertain a few of your close friends and family in a larger outdoor space. Whether it’s hot and you’re cooling off by the pool, or you’re simply enjoying a nice evening outside, grilling outdoors for a larger group of people can be intimidating. While there’s always the basic hamburgers and hot dogs, we love mixing it up a bit. These grilling recipes are sure to be huge people pleasers for big crowds!

Grilled Balsamic and Soy Marinated Flank Steak

Meat is a staple on almost every grill enthusiast’s menu. But if you’ve ever cooked for a larger crowd, you know that constantly grilling individual hamburgers or chicken thighs can get tiresome. Plus, you want time to enjoy your company and actually eat some food yourself! That’s where this grilled flank steak recipe comes in. Easy to make in larger quantities, one grilled steak can serve 4 people and makes for great sandwiches.

Ingredients

  • ½ Onion (chopped)
  • 3 Garlic Cloves (chopped)
  • ¼ Cup Olive Oil
  • ¼ Cup Balsamic Vinegar
  • ¼ Cup Soy Sauce
  • 1 Tbsp. Dijon Mustard
  • 1 Tbsp. Rosemary
  • 1 Tsp. Salt
  • ½ Tsp. Ground Black Pepper
  • 1½ Flank Steak

Instructions

Whisk together all ingredients (excluding the flank steak) in a mixing bowl. Once mixed, place the flank steak in a large resealable plastic bag and pour the mixture into the bag to coat the steak. Squeeze the excess air from the bag, seal it, and let it marinate in the refrigerator for at least 30 minutes, and up to 2 days.

When ready to grill, preheat your grill for medium heat and slightly oil the grate. Remove the flank steak from the marinade and shake to remove any excess liquid while reserving the remaining marinade. Cook until the steak is firm and hot in the center, approximately 6 to 8 minutes per side. Brush occasionally with the reserved marinade to keep the meat moist. The internal temperature of the center of the steak should read 150 degrees F on a standard meat thermometer. When done, remove the grilled steak to a cutting board and let rest 5 minutes before slicing thinly across the grain.

Honey Mustard Grilled Chicken

When you’re looking for something easy on the wallet, buying chicken in bulk is the perfect solution for larger parties. Grilled chicken breast is easy to cook and tends to be a unanimous crowd pleaser. This honey mustard grilled chicken recipe is one of our favorites for how simple it is. You’ll quickly be able to get mass amounts of chicken on and off the grill while still leaving time to enjoy yourself.

Ingredients

  • ⅓ Cup Dijon Mustard
  • ¼ Cup Honey
  • 2 Tbsp. Mayonnaise
  • 1 Tsp. Steak Sauce
  • 4 Skinless, Boneless Chicken Breast Halves

Instructions

This recipe is quick and easy, so start out by preheating your grill for medium heat. While that warms up, mix together all of your wet ingredients in a shallow bowl. Set aside a small amount of the honey mustard mixture for basting and dip the chicken into the remaining sauce to coat it.

Lightly oil the grill grate before placing the chicken over indirect heat for 18 to 20 minutes, turning occasionally or until juices run clear. Baste as need with the reserved sauce during the last 10 minutes. Each grilled chicken breast will make one serving.

Easy Grilling Recipes

While there’s a particular kind of joy in finding the perfect marinade ratio for that delicious grilled pork shoulder or whole chicken recipe, sometimes there’s just not enough time to make it. Especially for families looking for something quick and filling to satisfy hungry mouths, we understand how beneficial easy grilling recipes can be. We hope you enjoy these quick and easy grilling recipes as much as we did.

Grilled Sausage with Potatoes and Green Beans

Sausage is great no matter how you cook it, but something about letting it roast and pop on the grill makes it that much more delicious. Add in potatoes and green beans, and you have yourself a full meal in one easy packet in no time. The great part about this grilled sausage with potatoes and green beans recipe is that you can customize it however you like. It’s also easy to make in either small or large portions, depending on your needs.

Ingredients

  • ¾ Lbs. Fresh Green Beans (trimmed and halved)
  • ½ Pound Red Potatoes (quartered)
  • 1 Large Onion (sliced)
  • 1 Lb. Smoked Sausage (cut into 1-inch pieces)
  • 1 Tsp. Salt
  • 1 Tsp. Ground Black Pepper
  • 1 Tsp. Vegetable Oil
  • 1 Tsp. Butter
  • ⅓ Cup Water

Instructions

First, preheat your grill on high heat. Next, on a large sheet of foil, place your green beans, red potatoes, onion, and sausage. Sprinkle the mixture with oil, season with salt and pepper, and top with butter. Tightly seal the foil around the ingredients to make a small packet, leaving a small opening at the top. Pour your water into the opening, and seal it up before placing the packet on the grill. Once on the grill, cook for 20 to 30 minutes, turning once, until the sausage is browned and the vegetables are tender. One packet will make 4 servings, but can be customized to accommodate more people.

Chipotle Crusted Pork Tenderloin

Having a quick and easy meat recipe on standby is always useful. If you’re tired of the same old hot dogs and hamburgers, we suggest trying this chipotle crusted grilled pork tenderloin recipe. It’s sweet, spicy, and goes great with any side dish.

Ingredients

  • 1 Tsp. Onion Powder
  • 1 Tsp. Garlic Powder
  • 3 Tbsp. Chipotle Chile Powder
  • 1½ Tsp. Salt
  • 4 Tbsp. Brown Sugar
  • 2 (¾ Lbs.) Pork Tenderloins

Instructions

As always, preheat your grill—this time, on a medium-high heat. While that preheats, combine all of your dry ingredients into a resealable plastic bag. Place both tenderloins into the bag, seal it, and shake the bag around to coat the meat evenly. Refrigerate for 10 to 15 minutes to let it marinate.

Once ready to grill, oil the grill grate lightly before placing the meat. Cook the tenderloins for 20 minutes, turning them every 5 minutes. Once done, remove from the grill and let stand for 5 or 10 minutes before slicing.

Healthy Grilling Recipes

There aren’t too many “unhealthy” grilling recipes out there considering grilled meats are lower in fat and calories. With that said, there are always healthier options that are better for you than meats wrapped in bacon. Here at Gochnauer's, we’re huge fans of grilled vegetables since you don’t have to do much to them to make them so delicious! Here are a few of our favorite recipes that will be a bit friendly on the scale.

Grilled Salmon with Avocado Dip

Salmon is a great meat alternative when you’re looking for something a little more filling than vegetables. Packed full of vitamins and healthy fats, a grilled salmon dinner is perfect for a more calorie-conscious griller. This grilled salmon and avocado dip recipe is rich and delicious, so we hope you enjoy it as much as us!

Ingredients

  • 2 Avocados (peeled, pitted, and diced)
  • 2 Cloves Garlic (peeled and minced)
  • 3 Tbsp. Greek-Style Yogurt
  • 1 Tbsp. Fresh Lemon Juice
  • Salt and Pepper to Taste
  • 2 Lbs. Salmon Steaks
  • 2 Tsp. Dried Dill Weed
  • 2 Tsp. Lemon Pepper

Instructions

Preheat your grill for high heat and lightly oil the grate. While that heats, mash together your avocados, garlic, yogurt, and lemon juice in a medium bowl. Add salt and pepper to your taste preference. Once that’s completed, rub your salmon with dill, lemon pepper, and salt. Place the salmon on the grill and cook for 15 minutes, turning once, and until the grilled salmon easily flakes with a fork. Serve with the avocado mixture on top. This recipe will make 6 servings.

Grilled Zucchini Pizza with Goat Cheese

Greasy pizza is never healthy, but we all love it and give in to the temptation from time to time. While you can cook a slightly healthier version of regular pizza on the grill, we thought this grilled zucchini pizza recipe made it even healthier! Replacing the calorie-heavy dough with something like zucchini has this meal only coming in at about 317 calories per serving. This recipe only makes 2 servings, but this can easily be increased for larger families.

Ingredients

  • 1 Large Zucchini (cut into ½-inch rounds or long “planks”)
  • 1 Tbsp. olive Oil
  • ¼ Cup Pizza Sauce
  • ½ Cup Red Onion (chopped)
  • ½ Cup Roasted Red Pepper (chopped)
  • ½ Cup Fresh Mushrooms (chopped)
  • ¼ Cup Crumbled Goat Cheese
  • 1 Oz. Shredded Mozzarella Cheese
  • 1 Garlic Clove (minced)
  • 1 Tsp. Italian Seasoning

Instructions

Preheat your grill on medium heat and lightly oil the grate. Take your zucchini rounds (or planks) and brush one side with olive oil; brush the other side with pizza sauce. Evenly divide your red onion, roasted red pepper, mushrooms, goat cheese, mozzarella cheese, garlic, and Italian seasoning over each piece of zucchini. Place the pieces on the grill oil side down for approximately 10 minutes, or until the zucchini is tender.
